How do you feel about beets? I have never been a fan until I tried this salad. Oh.My. It is absolutely delicious. I still keep the beet count a little light as I like more sweet potato than beet, but all combined it is delicious and so pretty! I brought it to a party and it looked and tasted good, so I felt that it should be shared.
Chop the pears, sweet potatoes, and beets into nice bite size chunks
If you don't wear gloves you will stain your hands. I'm at peace with it.
After an hour of roasting, the aroma is divine.
Sweet Potato Salad
2 lbs sweet potato
1-2 beets
2 pears
10 Fresh Sage leaves
10 fresh Tarragon leaves
(if you don't have the fresh herbs, it tastes just fine with sage/tarragon from your spice rack)
Olive Oil
Preheat oven to 375
Chop sweet potatoes, beats, and pears into similar size chunks
Spread vegetables out on a roasting pan
toss the vegetables with some olive oil
Add chopped Tarragon and sage
Cover dish with foil
Bake for about 45-60 minutes or until the vegetables are soft
