In Keeping With Our Pumpkin Theme

Here is a great recipe I am making for a Bridal shower. It's easy too!

Pumpkin Bars

2 C. flour
2 C. sugar
2 t. baking powder
1 t. baking soda
1 t. cinnamon
1 t. nutmeg
1 t. cloves
1/2 t. salt
1 C. oil
15 oz. can of pumpkin
4 eggs

Frosting

2 C. powdered sugar
1/3 C. butter softened
3 oz. pkg. cream cheese, softened
1 T. milk
1 t. vanilla
(combine ingredients and beat until smooth)

Heat oven to 350 degrees. Grease a 15 X 10 in. jelly roll pan. Lightly spoon flour into measuring cup; level off. In large bowl, blend all bar ingredients at low speed until moistened.
Beat 2 minutes at medium speed. Pour into prepared pan. Bake for 25 to 30 minutes or until toothpick comes out clean. Cool and then frost. 48 bars (you can freeze some)
